"Hi this is Dave for Expert Village and today we are roasting a pig. Okay now we got our marinade injected into the pig, then what you want to do is salt and pepper the outside of it. Now you don't have to turn it over and on the skin because that is going to be crisp up later and you would be you will be seeing how that works. But I just get the salt all over the inside it is going to be a great flavor, then some black pepper. I like to use the table grind that they call it as you can see it is a little bit courser. Don't worry about to much cause this is a pretty big pig s don't worry about over peppering it. So you want to put this in the refrigerator overnight. Remember it is going to take about 4 hours to cook maybe a little bit less but you want to make sure you take out of the refrigerator and get up to about 70 degrees using the thermometer on the thickest part on the butt. Cause you need it to be 70 degrees otherwise it won't brown as well as it should and it won't cook all the way through so make sure you do that."
