"Hi this is Dave for Expert Village and today we are roasting a pig. Okay about our pig where do you get one is the first question? I go to our local wholesaler that can get this type of pig anywhere they get it from usually from our valley area. They would bring one in for you this one has been split, the head as been taking off, and also the feet of the ankles. You can use the head anything like that for posole or something like that. This is going to be a suckling pig this is only about 30 pounds but the caja china can take up to a 100 pound pig. Okay when I'm doing my catering I consider about a 1/4 pound of pork per person this is about a 30 pound pig. You figure after the bones and all the waste part of it that is probably about 15 pounds of meat so 15 pounds I would think would feed about 60 people comfortable with all your side dishes and thing like that."
