"Hi, this is David for Expert Village today we are going to make coq au vin. So now that we have our onions our pearl onions they have been blanched in boiling water for just about a minute. Now we have put them into cool water so we can go ahead and handle them. So go ahead and grab your knife and I like to just pull back that skin and you can see it comes off pretty easily. Even if you don't get everything off here that first fine skin that is going to do be fine for this dish. Just go ahead and add them to the mirepox and the garlic and just go ahead and grab another one. Sometimes if you use the top when you cut it it would allow you to grab another little piece of it here as you come across. That first little layer it is just like any onion there it is just pop it right out like that. Again don't worry about it if you have a little bit of extra skin on there cause it is not going to make any difference."
