"Hi, this is David for Expert Village and today we are going to make coq au vin. So we are now going to deglaze the pan with cognac. You can also use regular brandy if you don't like cognac. It is just wonderful cause this is a French dish. But what you want to do is be very careful with this as you pour it in the pan because it has a lot of alcohol in it. It could ignite which is just fine. What we are going to do is scrap up all the brown bits here so this is how we do this. I'm going to open this up. Again it may flare up so just. About a 1/4 of a cup of this. What this does is you want to scrap it down and it is going to pick up all these bits on the bottom all of these beautiful flavor bits. You can use either a spatula or you can go ahead and use a spoon. All of this would come up nicely and don't worry about it all the alcohol does burn off but brandy or cognac has such a great flavor to it. Now this is just another flavor element and look at all that come up."
