" Hi! I'm Louis Ortiz on behalf of Expert Village. We are showing your the final step for preparing a Beurre Blanc Sauce. I've got a 3 to 1 ratio, 3 parts dry white wine to 1 part white wine vinegar in the pan and some finely minced shallots. I started this at the very beginning so I had enough liquid within the pan so that we could get the shallots nice and soft and translucent because we just did a fine mince on them. We brought it up to a simmer so that we could reduce it down and it is reduced down to about a level we are after as far as that goes. As you can see in the pan, there is just a little bit of liquid left. So we are going to go ahead and put in a couple of tablespoons of heavy whipping cream; there's 2, going to put just a small half of another tablespoon in there. What we are going to do; that was 2 ½ tablespoons of heavy cream. We are going to just swirl this around so that everything blends together nicely and it is already coming up to simmer some so I am going to lower it just a little bit simply because I want to kind of elongate the cooking process of everything blends together,bleeds in together the way that it needs to. If I just brought this up to a really fast simmer and just immediately started mounting it with butter, all the flavors wouldn't have infused together at that point. Again, we are going to use some cold butter pieces of cold butter; going to go ahead and put that on low. We are going to use some whole cold butter pieces that I have in the refrigerator and we are just going to start to melt those in here and once we swirl all those around and achieve all one color, then we will have our Beurre Blanc Sauce. You can leave the shallots in there are you can drain them out. It just depends on your preference. So we will be right back and show you how to mount this with butter and this will be a finished deal. "
