"Hi I'm Rachel for Expert Village. Now we are going to see the dough and see how it rose nicely. You can see how it doubled in size, it filled the bag. We need to punch it down, h'm not going to take it I'm going to punch it down and we need to after punching it down we need to wait another 20 minutes to let it rise a little bit more before shaping the bagels. The importance of punching down the dough and letting it rise again is to get it more airy and cook nicely. If you don't let it rise enough and you don't punch it twice it might the dough might stay very concentrated and when baking it and eating it, it might be very hard for any bagel actually because it's a very heavy dough that is why we are needing to let it rise twice. During the second time that we wait for the dough to rise we should take start boiling the water so it would be ready for cooking the bagels. Cause once we let it rise the second time we are just going to just shape them and cook them right away."
