"Hi I'm Rachel for Expert Village. Usually when you make a dough you should have a little bit of extra water next to you and extra flour just in case it comes to sticky or not everything is getting together with the mixture. Don't over do it cause that is going to change the whole texture of the dough. The texture of this dough is a little bit harder and heavier then if you are familiar with a pizza dough or a light bread dough which is more light and not as hard as this kind of recipe for the bagels that we are going to make today. Once the dough is finish I'm going to take it and put it inside a plastic bag to let it rise. If it is a larger amount you can just take a larger plastic bag, leave it inside the bowl and let it rise like this. But I prefer for this amount to just take a sandwich bag or whatever, put the dough inside and we are going to let it rise now for at least 1/2 hour or until it doubles its size. "
