Choose Bread for French Toast

"MARIEVE HERINGTON: All right, so now we're ready to do the French toast. You can do French toast with really any bread you like. You can do it with regular white sandwich bread if you want. But since the brunch, it's a special occasion; why not use a special bread to fit that occasion. How about a croissant, or you can even use a nice baguette, the french baguette if you have that. Today, I'm going to be using my favorite, challah, or it's almost--an egg bread. You could use a brioche, something's that's very high in butter content, so that once you fried up on the pan, it's going to be delicious. Now, this bread also that I've cut, its a day old, and not--it's not because yesterday I was really busy and had to do everything the day before, and picked up the bread and it got stale. That's on purpose. You want your bread to be stale, because then, if it's too fresh it will fall apart by the time it gets into the egg mixture. And also, it just won't absorb quite as much. When it needs the moisture, it will absorb it without falling apart. "
