"So look at that. The leeks are very, very soft. Just getting golden in some places, but that's how, you know, it's done, really, really soft, and it smells sweet more than anything. So I'm going to transfer these, and of course they're beautiful and glossy from the butter. Transfer these to a small bowl for just a second, because I'm gonna get cracking, literally, with the omelet. Now for an omelet, a generous size omelet, you want to have two eggs per person. Just whisking it with a fork. No need to get the big whisk dirty. I melted some butter. I'm just gonna brush, there's, of course still some residual butter from the leeks on there. But I'm just gonna brush some additional butter on there, and turn up the heat just a bit more, it was on quite low for that, for the leeks. Then pour in the eggs. Very simple. Just gonna let that cook on medium heat until the eggs are a little more set before we add the additional toppings."
