"Hi! This is Matt on behalf of Expert Village and today we are going to learn how to make my Brooklyn Omelette. Then we are going to cut our green onion. See these tips here, little roots; we want to cut that. and going to put that into the waste plate because we are not going to use that and just chop them, dice them finely so they are small pieces. We are not going to use all of the green onion. Just about half-way up and you can save the top part, this part here. You can save it and put it in a little Ziploc bag and use it later. The top here, the thinner parts are really good like for soup. Anyway we are going to use this part. We are going to put that in our plate, our bowl. Now the tomato all I need really is three slices of tomato for this omelette so I am just going to cut the end and then cut three thin slices and put that into the bowl. You can save that for later use. Now the onion, we are going to chop the ends of the onion off like this, put this in the waste. Then I am going to cut across the top layer and turn it over and cut the top layer on the other side. I am just going to peel back the top layer. It is easier that way peeling it than the other way. Trying to peel takes too long for me at least. Here's another way of getting a good diced onion is you cut across it like this and then you cut across again the other way. Now when you cut down, you have diced onion so that is the easy way to do that. Just do one more time and cut across. Starting to burn my eyes and here we have diced onions. So we can save that for later use and put that in the bowl. "
