Series Summary

The egg is one of those foods that you can find almost anywhere you go. Its role as a staple food in the world diet is due in part to its value as a protein supplement and its ability to help foods bond together. Because of these superior qualities, a myriad number of ways have been devised to cook eggs: scrambled, fried, sunny side up, over easy, over hard, as an omelette, hard boiled, poached—and there’s no end to the number of recipes that require eggs, including cakes and other desserts, pastries, soups, quiches, custards, fried rice, potato salad, and sandwiches. All in all, eggs are one of nature’s ultimate foods.

In this free breakfast cooking series, learn how to make Matt’s secret recipe for a Brooklyn-style egg omelette. He’ll walk you through this dish from start to finish, including the ingredients used, how to prepare the vegetables, how to fry the lunch meat, seasonings, and how to cook the perfect omelette in the skillet. You don’t want to miss this secret recipe—anything with fried lunch meat and bacon is excellent, in my experience.

"Hi, this is Matt on behalf of Expert Village and today we are going to learn how to make my Brooklyn omelet. You know there is an interesting story about this omelet. When I was about ten years old I would come home from school and both of my parents worked. So as far as food as concern I was pretty much on my own, but I always watched my father cook so I was never afraid of the stove. Now it wasn't about the defrosting meat and make a series dinner, no way. I mean I was ten years old so I grabbed things I understood like eggs, and cheese, and lunch meat stuff like that. But after a little bit of experimentation and a couple of years Matt's Brooklyn was born. So now I'm going to show you how to make a meal that is great any time of the day. It's awesome for breakfast and it's hearty enough for dinner. So get your shopping list ready and lets find out what we need to make Matt's Brooklyn omelet. We need four large eggs, 1/4 stick of butter, 1 green onion, 1 tomato, 1 red bell pepper, 1 white onion, 3 slices of American cheese, some rare roast beef, some oven roasted turkey, and some ham. Also there is a secret ingredient and we are going to find out what that secret ingredient is in a later clip."
