"Hello! This is Chef Sean Roe on behalf of expertvillage.com. Now that we have our poaching liquid ready to go, we now put our eggs in the poaching liquid. One thing to remember, when you are poaching eggs is that you cannot drop them very hard into the water or they will break up; you have to be very careful not to break the egg yolks. What we do is we crack our egg; we get very close to the water, not burning yourself of course, and drop it slowly into the water. Gently placing them into the water. They do sell poaching kits, which come with little baskets that the eggs fit into, and then you just drop them into the water. Then when they’re done you pull them out; it’s very convenient. If you don’t have that that’s fine. Using this method would work just as well with a spoon. We’re just going to wait for the eggs to completely cook through. You can have however, have the eggs soft in the middle if you’d like to have runny eggs, but you can cook them 100 % as well, it depends on your preference. When these are cooked they’ll turn opaque; you won’t be able to see the yolk what so ever and it’ll be very easy to lift out of the pan. Then we’ll move on to our next step, which is the assembly of the eggs Benedict. "
