Series Summary

Sauces are not eaten alone. They are usually spread over another dish to heighten the flavor of the rest of the food. All sauces need a liquid base such as water, oil or tomato juice. Usually, in the case of pasta there are other food elements mixed into the sauce such as sausage, pork and beef but in most other cases the sauce is a liquid food. Sauces are used world wide and all very different depending on the country and its cuisine. For example, Italian sauces are usually tomato based and used with many different pastas and Chinese sauces are more soy based because soy is so abundant there.

In this free video series our expert will show you how to make a fantastic Italian sauce with sausage, meat and pork. You will learn the materials you will need to get started and he will walk you step by step through the whole process from choosing the tomatoes to the final spices. Video Transcript

"On behalf of expertvillage.com, my name is Richard DeCola and today we are going to make some great, great Italian sauce. Today we are going to talk about pasta sauce and everybody has their old grandma's recipe or knows someone that has an Italian grandma that used to make fresh pasta sauce from scratch. That is what we are going to do today. We are not going to use tomatoes from the garden which we do some times because it is just a little bit easier. Being in New York City, you can get pretty good high quality cans of tomato, in the can and just work with that. A lot of people talk about different things with their sauce. I am going to tell you one thing that is kind of funny. My mom and her sisters grew up in an Italian neighborhood. They are actually all Irish women but because of them living in this Italian neighborhood, they actually became really good at Italian cooks because all of the Italian men were marrying the Irish women and that is how that came to be. Just want to let everyone know we call it gravy and not sauce. "
