"Hello! This is Chef Sean Roe on behalf of expertvillage.com and the next cooking method we are going to review is a pan fry. There are two steps to a pan fry. First step is you are going to take your beef over some hot oil and you are going to caramelize on both sides; covering this so you don't get splattered with oil. Once we are sure that we have both sides nice and caramelized, this is a dry heat cooking method which means we are only using oil and no other liquid. We are doing this to a steak that will make it so that we can have it at any doneness that we like; rare, medium rare or well done. When we are sure that we have color on both sides, we are going to move on to our next step."

on 3/15/2009 Channelization is a process in which sugars are oxidized by heating the sugars at high temperature. I think the specific term for meat actually is Maillardization, in which the process occurs when sugars are converted by amino acids while exposed to heat. Anyway, meat does contain sugar, particular sugar that is chemically bound into other compounds. By searing meat, you convert the sugars in meat.

on 8/2/2008 How do you caramelize steak? I noticed you've used that term in several videos. I've only heard the term caramelize used to describe one culinary process. The process of liquefying sugars naturally found in fruits and vegetables into a... well a 'caramel like' liquid. There's no sugar in beef though. So what do you mean by statements like,"we have both sides nice and caramelized?"
