"RICHARD BUCCOLA: Hi, this is Rich Buccola of New York City. And today, on behalf of Expert Village, I'm going to show you how to make beef stroganoff. All right, the first thing I like to do is just slice up my meat, and I also salt and pepper it. Just going to take some salt and just give it some lightly coating of salt and some fresh pepper right on the cutting board. I'll add a little bit later, too. I just like to give it a little something as we start. What I do then is just I started to slice some, and just slice nice, lengthwise pieces of the meat and just add them right back to our bowl. Use a beautiful, definitely go out and spend the money and get top sirloin or get a really good meat to do this. I already had this cut for stew but I like to cut them a little smaller. It's just better for our beef stroganoff. So slice all of these up and add them back to your bowl. All right, we have our meat all sliced up nicely, and what I want to do is just add a little bit more salt and pepper before we start to brown it in our saucepan, in our sauteing pan. All right, you're just going to sprinkle some salt and we're going to mix it up. And we're going to put some fresh black pepper going around a few times. And this is good enough seasoning for our meat."
