"Alright, now we're going to add our scallion here. I'm just going to chop off the very end of it, then I'm going to run, right down the stock, just like I did, just like you would with celery and I'm going to get a little bit of the white end, in here. On this one, I'm going to do the opposite. I'm going to cut up and get all of the white, just until we get to the light green part. I'm going to take those and add it to our sauce and discard the ends. Then I'm going to take an orange and cut it in half and I'm going to cut it, in half again, so I have a quarter. I'm going to peel off, the outside layer, of skin, on two of these pieces and then we'll just go and we'll dice this orange up."
