"Hi. This is Rich Buccola here in New York City and today on behalf of Expert Village, I'm going to show you how to make Ratatouille. Alright, so we have our red onion. We're going to take our skin off of it and actually chop this up real fine as well. Alright so you have your beautiful red onion, just cut off the ends, like so. What you want to do is just give this a little slice and remove that outer layer of skin like so. With that, I'm going to slice our onion in half and just go along the lines this way with the onion. Take your time when you cut. And chopping should be fun. Play some music, open a glass of wine. Well you know just get involved. Get in the kitchen, get your kids involved. That's what we say it. Don't worry if something like that happens, just put it all back together. Turn it this way and start making your cuts. And don't worry if it's too big, we're going to chop it down using our chopping motion. Alright so one medium red onion. Lot of onion. Don't forget with ratatouille, ratatouille, you don't have to worry. There's never enough or you never put too much in ratatouille. You see I didn't mince this. I just chopped it. I got it to a nice size that I like it and that's the way I'm going to do it. I'm going to go right now to our, we're going to go to our big pan, our big bowl, our big dutch oven pot and we're going to start sauteing our garlic for about a minute. Just to open it up. And we're going to saute our onions right behind it. While that's going on, we're going to be chopping up some more vegetables. Come back. It's ratatouille here on Expert Village."
