"Now that our garlic is starting to sizzle, we're going to add our onion, and while we're waiting for that to heat up, we're going to take our broccoli, and just take our florets, and cut them along. We want to have some big pieces. You don't want anything smaller than that, but we don't want anything as big as this. We'll go and try to cut them into uniform pieces; go ahead and do that for the entire head. And again, after you've cut them all, go over them one more time just to make sure that all the pieces are of a more or less uniform size."
