"Now we're going to prepare our chicken. Cover the bottom of one of our bowls with some flour. Some bread crumbs in another. Then we're going to make an egg wash. So we're going to take an egg, we're going to add about an equal amount of cold water. Then we'll loosely beat this egg. Then we're going to take our chicken and again we're going to try to press this in to close it. Then we're going to dip it in our flour. All the time pressing this to keep it closed. Then we'll dip it in our egg wash. Then we're going to roll it in our bread crumbs. Make sure this is thoroughly coated. Then we press down the whole time with this. Or actually, when we saute this, we're going to saute it here so that it fuses together."
