"Hi! I'm Rich Buccola of New York City and today on behalf of Expert Village, I'm going to show you how to make stuffed eggplant. First, give your eggplants a good washing. Get it under there. Give it a good washing. This is a real nice, 2 beautiful eggplants. We're going to make a really nice stuffed lunch today, that's actually going to probably feed about 6 by the time we're done. You can probably cut this one in half. Anyway, let's go back over to our cutting board. We're back at our cutting board. This is the stem, the top piece. You don't really need that so we're just going to cut that right off. Then we’re going to go in half. What you want to do is cut this bad boy right in half. You're going to see there's our inside. Nice. At this point, what you're going to do is you're going to hollow this out a little bit. You're just going to take maybe your pairing knife just to give it a little cut. You're going to work along side the whole outside. Just give it a nice cut. You'll see by doing that, you can get in here with your spoon and just start to take out the whole piece. If that happens, don't worry, just break it out. Again, we're going to hollow out a nice amount on both sides. What we're going to do is we're going to use that. Here's your one hollowed piece. We're going to that to the other side. Just take this piece and we're going to give this a little chopping. We're going to go this way and give that a little chopping as well. Come back. Do all 4 pieces like this. Take your choppings and just put them right here into our bowl. Come back and we'll start getting this all together. Finish chopping up your eggplant so you can catch up to me. You hungry? I know I am. This is a great one too. You're going to love it."
