"Hi, this is Richard Buccola of New York City and on behalf of Expert Village, today I am going to show you how to make some mashed potatoes. So you have your scallion. You want to chop this real, real fine. The finer, the better. Do you have to be a gourmet chef to chop them up? No. Real simple, just keep your fingers back. Just start to chop them down. It doesn't matter if they are not fine yet. Because if you chop them once, you can start chopping them up again. You just get the first chop going, going down and get them all first rough chopped I guess we'll call it. If you see a big piece of skin like that, just pull it off. So here's your scallion, just take your tip back end of your knife and start going back and forward and chopping it real fine. When I come back, we are going to start adding all of our stuff, checking our potatoes and getting this scallion chopped fine and it is a great great recipe for any side plate. Mashed potatoes are great for meatloaf which I make here on Expert Village. Go out and make these potatoes with it. It is awesome and when I come back, we are going to keep making it right here on Expert Village. "
