"CHEF BLONDIE: Alright, we're coming to the good stuff now. I want to put in a little bit of Old Bay Seasoning. You know there's--you know I'm not quite sure of everything that's in Old Bay Seasoning, because some of the seasoning has a secret. But it's the greatest complement to go with seafood is Old Bay Seasoning. I'm using just a little less than a teaspoon, but I'm going to give this a taste just as I go, see if we need a little more or a little less. We use about two teaspoons of mustard. And this is Dijon. Now you could use a whole grain mustard if you like, if you want something a little more earthy. You could use a yellow mustard if that's something that you like and you prefer. Doesn't really matter, I happen to like the Dijon. It really gives it a really nice flavor. And mayonnaise. And with the mayonnaise I kinda eyeball it. Two healthy tablespoons, got a little bit on my fish here. And I'm going to start to slowly add some of the lump crab meat. I'm being really careful as I'm putting this in 'cause it's so delicate. Okay let's give this a stir. Now, if we were making crab cakes, I would go ahead and use an egg as a binder. But I'm not worried about this being shaped into a crab cake or being too soft, as matter of fact you want this soft to go inside of the filling. That looks about right. I want to give that a little taste. Hmm. I'll use a little more crab. I like the crab. Just a little bit more, that crab is so sweet. Hmm, so good. Just a little bit more of that. Look at how pretty that is. And here we got the green, the red, a little bit of the yellow and the mustard. Okay now. Hmm, it was perfect. Oh I think I have some on my cheek. Great, now, we're going to stuff the fish."
