"CHEF BLONDIE: So we're just finishing up with some of the spicing here, a little bit of more salt and great. Let me get on patting it with my hands. We now want to bring our sheet pan and a regular cookie rack. And what I like to do is put some aluminum foil down on my pan because it really saves clean up. I don't like to wash dishes, I don't know about you. This makes it so much easier. Any juices that run down will run into the pan and I can just clean these up by putting the aluminum foil together and throwing it away. So my rack--and the reason I'm using a rack, and this is going in the oven, is because we're going to get a good airflow all the way around this meat. Now I don't want you to get afraid when you pull this out of the oven. It's going to look a little like the lunar surface, all crated and sort of gray but when we're done I guarantee you this is going to be a gorgeous gorgeous dark crust with a beautiful pink center. So I have preheated my oven to 275 degrees which is a very low temperature. I'm going to take these little babies over to the oven, put them into the oven and for a perfect medium rare, it's going to go for about 25 minutes at 275 degrees. "
