"PAMELA BOWMAN: And I'm taking the sausage out of the casing just with my hands. They're sort of like--they're little meatballs. I'm going to break it up a little bit but I kind of like these chunks without the casing. It just seems to taste better. And this is Turkey Italian sausage. Now, I love pork. I think pork sausage is great. But every now and then, the turkey is kinda nice. It's a little bit lighter. I know it's a little healthier for me. It's a little better for my cholesterol and it tastes the same. So why not? This is really kinda fun, pulling it out of the casings. I'm going to work a little faster here because our onions are starting to brown a little bit. I got all that out of the casing. Put this behind us, and we're going to get in there and start stirring.
