Making Salad Dressing for Mango Chicken Salad

"So we are in some sort of the salad part or our mango salad. I have some great micro greens they have been triple washed, it is really important if you buy these that you yourself wash them a couple of times. They grow very close to the ground and just to be extra sure that we are not getting any ecoli from the soil you want to make sure they are really well washed. But we are going to make a great dressing for them. I'm going to start out with my favorite Traders Joe's Orange Muskat Champagne vinegar it can't get much better than this. I'm doing maybe a quarter cup, I am eyeballing it you can eyeball it this is pretty easy to eyeball. I got a little bit of Dijon mustard, let me grab a spoon over here just about that much Dijon mustard. Now we are going to taste this as we go, we may decide that we need a little bit more Dijon mustard but for the moment we should be good. Tarragon this is the secret to French dressing any of those French restaurants you have been in and you notice that you really like the dressing it has a little bit of tarragon in it. It turns out the flavor in your greens. Of course I'm having getting the top off I'm just going to shake it like that. Perfect. A little bit of salt, a little bit of pepper and we got olive oil with a twist off cap my favorite. This is a really nice olive oil it is very fruity. I'm going to pour in. Another thing I'm going to whisk while I'm doing this it looks a lot harder than it is but I want to get it nice and multiplication. Let me just get this a little taste now it needs a little bit more vinegar cause I really want to have the flavor kick out. Are you ready? Dip your different finger oh that is perfect. "
