Okay, I have cranked my heat under my pan. Get my pan nice and hot. Put a little olive oil in there. You can be a little generous with the olive oil. Just let that olive oil heat up just a little bit. I am going to kind of do this with my hand. Make a little patty. It is a little messy, but it's fun. Who says you can play with your food? Whoo! Sizzle, sizzle. I like that. I need to wipe my hands real quick. It sounds really nice. With the perfect temperature. Just really kind of getting a crusty edge on both sides and warming the potato through. Because it is going to be a base on our plating for our meat. Hmm. So, take look underneath there. Nope. Leave that go a little more. We are using a metal spatula. This wants to stick and it is going too probably to stick a little bit. Don't worry about it. We are just trying again to heat it through. Get a tiny bit of browning on it. That is really all. You are not going to get a crust like a potato pancake. It is going to be very soft with the cheese. Nicely heated through, but it is sliding around our pan. Perfect. Okay.
