"Have you ever wondered; what do you do with those leftover smashed potatoes that you made from a night or two ago? I have a great sort of potato pancake that I make. I just take leftover smashed potatoes; which I have right here. These are; literally, smashed potatoes; made with sour cream, potatoes, and a little bit of butter. I'm going to add a little bit of heavy cream; to liquify it; because you can't go wrong with heavy cream. It's already got the great flavor of the sour cream in it. Now what would really be good in here would be some chives. I actually have some chives. We've got these nice and smashed, and I've got some grated Gruyere cheese. I'm going to add a little bit of that for flavor, and for texture. Gruyere's a nice cheese; it melts really beautifully, and real flavorful; nutty. I like a lot of cheese, so I put a good handful in; why not? A dash more of cream; to hold this all together, and then I want to add a little bit of coarse black pepper; a little bit of flavor, and I'm ready to make this into a little patty."
