"Our pan is nice and hot. I've got some really good olive oil and I'm going to be generous with the olive oil. In go our onions and I'm going to add a little bit of salt because you need to balance. It's also going to bring out some of the water out in the onions and then as they just start to get a little translucent I'm going to want to add some sugar to really sweeten these up and it isn't that the onions aren't already sweet, they are, but it just adds a little depth of flavor and helps them turn a nicer brown. So they're already starting to get translucent. Grabbing my sugar, and I'm not using much, maybe a quarter of a cup if that, trying to eyeball it, just a tad more, perfect, let's give that a stir. Now my flame is on medium and I just want to let this cook down so these are a glorious brown and soft. These smell good."
