"I've preheated my oven to 350 degrees. Rule of thumb for a roast is about 15 to 20 minutes per pound. This, I would say, would be about 30 minutes. But an internal temperature should be approximately 160 to 165. The old school used to say that you had to cook it to 170 degrees because of trichinosis. Well, those days are long gone. We eat pork pink inside these days and we have no problems at all. In fact, it's more desirable and it's more tender. We have a leaner cut of meat, our pigs are fed differently, they're healthier. So the chance that you're going to get trichinosis from slightly undercooked pork is almost nebulous. So, I suggest putting this in until it reaches an internal temperature of no less than 160, no more than 165. And here's what it looks like as it's going in. And we're taking it over to our preheated oven. I've got it on the middle rack, 350 degrees by my oven thermometer. And we'll be back in about 30 minutes to check its internal temperature."
