"This is Paul Amato on behalf of Expert Village now that our wet mop is ready we can go ahead to the smoker and start applying it to the ribs. What we're going to do here is flip over the ribs and as you can see there a really nice color and we're going to take this wet mop and just slather it on. You don't have to go to heavy you just want to get a good coating and this will keep the ribs nice and moist. Smokers seem to get dry and this will calm that, now we're going to flip them over and do the other side. Once you have these covered you going to do is let them cook for I say for about another hour, check them again maybe wet mop them one more time and at that point what we'll do is tint them. Tinting is getting some tint foil and wrapping them up, what that does is will make them super tender if you like meat falling off the bone type ribs this will create a fire it will speed up the process."
