"This is Paul on behalf of Expert Village we're going to continue on and put the rub on the ribs. What your going to do is take your ribs and I like to rub the back side first, you want to be careful after you touch the ribs not to get your hands into the rub and contaminate it. But you can use a spoon for this I just like to pour some on, right on top of the ribs like this, basically rub that mixture onto the ribs. Now you can use more or as little as you like depends on how much of a crust you want. Flip them over pour some rub on there, get the side and get it these ribs nicely coated and that's about it, we'll do that for the other rack and we'll put them on the grill. Again you can put some more rub on this is you like it's up to you. One thing I like to mention is that you can certainly through these on right now, is what we're going to do but you can also put them in the refrigerator over night or even just for a few hours if you like to let them absorb as much as the flavor possible. I've done it both ways and be honest with you I don't mind throwing them on right now. Now that the ribs are ready rubbed we're going to put them on the smoker grill, what I like to do is put them back side down to start off with and further away from the fire box. And now we're going to say good bye for a while, now we're going to throw some wood chips on, open up the fire box, get a hand full of chips, drain them a little bit, and place them right on top of the fire. Close her up keep an eye on that temperature cause it will drop when you open up the fire box or the dome lid, and we'll make sure it gets back up to temperature about 250 and that point we'll just sit back and wait."
