"This is Paul Amato on behalf of Expert Village now I'm going to show you to get this membrane off and sometimes this is a lot of fun and sometimes it isn't What you want to do is get the membrane cut at the edge of the rib here to get it going. So once you get the membrane cut at the end of the ribs end ribs you get a piece of paper towel, this is the best way to do it if you try to get it without a paper towel you'll never going to get it off. To grab it with a paper towel and just pull and if your real lucky which I'm not it will come off in one pull. And you want to throw that off obviously, see just keep grabing it and pulling it off, I would say at this point it's ready to get rubbed down with a rub mixture. Your going to continue now with prepping the baby back ribs the only thing we need to do with this rack is pull the membrane off and we're good to go to get that rub going. One of the reasons why you want to get this membrane off is when you rub the ribs on this side it will stop the rub from getting to the meat and we don't want that. We want that rub to absorb as much as possible. After you started the membrane and pull and again I'm not getting that clean ripe but no worries just keep getting after it and you'll get it. Get a clean piece of paper towel here to finish this off and once this is ready put this back in the cooler, get them cold again, colder I should say and clean up a little bit and get the rub on this."
