Throughout human existence, man has used fire to cook his food. Today, we have discovered a great way to use the hot smoke from a fire to do the same. Smoking meat on a grill is done by isolating the fire on one side of the grill with the air vent on the other. The hot smoke from the fire gets drawn to the other side of the grill to escape through the vent and in the process slow cooks the meat as it passes over it. This not only traps in the flavor of the meat because of the slow cooking, but it also adds a unique flavor from the wood or coal that is used to create the smoke.

"Hi this is Paul Amato on behalf of Expert Village in this series of clips we're going to be talking about how to smoke ribs. We'll talking about different types of equipment that we're going to need to smoke ribs. The ingredients that will be used for rub that we will talk about later as well as charcoal and hard woods. And of course we'll be talking about what types of ribs you want to buy to smoke. Basically there are two types of smokers that you need to concern yourself with, the off set smokers as well as I like to call a bullet smoker. The smoker I prefer to use and I think is something you want to use as well is an off set smoker, it just allows for easier access to add coals and keep the temperature constant. Here we have the bullet type smoker it's a great smoker to start off with, just to keep your feet wet. Problem with this type of smoker to get to the coals your going to have to pick it up off it's base, fill up the coal every time you want to add some. And of course what this doesn't let the temperature fluctuate and that's something that you don't want."
