"Hi, this is Rich Buccola here in New York City, and today, on behalf of Expert Village, I'm going to show you how to make angel hair pasta primavera with shrimp. Okay. We're back, and first and foremost, we're going to work with our shrimp. Now, for this dish, you can use chicken if you had left over. I had a...They had a little sale, it wasn't much. It was instead of like $12 a pound; they were $10 a pound for these large shrimp. They're not even jumbo, but they are fresh and they are beautiful. And the way to buy shrimp is to go probably to your fish market. I do not recommend buying shrimp in the supermarket because sometimes they try to sell it past their time. And a good way to know when it's past their time, the shrimp will have little black marks on it, on the shell. And if it even is on the meat of the shrimp when you peel the shell, you know they're past their time. And there's still actually allowed to sell them because they're not going to hurt you. But you must realize that buying shrimp, first and foremost, you want to smell it. And it shouldn't smell like anything. If it smells really fishy, it's no good. It should also be translucent and have a nice, rounded back like so and should always go to that round back. There shouldn't be slime to it. If it's slimy, it's going to be something you don't want to buy...if it's fishy. And another finger is you could stick your finger...if you press your finger in it and you still see the hole or the circle of your finger, they're no good. See how I pressed really hard and you don't see the circle, so you know these are good. These are fresh as could be. I mean, I just got them this morning. They probably came out of the ocean like yesterday, so you aren?t going to get much fresher. So make sure you always go down to your fish market guy and learn. Talk to him. Say, "Hey, my name is Rich. I'm here and I want to meet you, and I want to become your best customer." So if you do that, he's going to always take care of you. So buy some good, fresh shrimp. When I come back, we're going to de-scale and de-vein these bad boys."
