"Hi, this is Rich Buccola here in New York City, and today on behalf on Expert Village I am going to show you how to make shrimp scampi. I love shrimp. It's a simple thing that everybody, especially Americans, love to eat shrimp. It's just a great, great, great, beautiful thing to have, but picking the right shrimp is very important, you want to get fresh shrimp. Now these are beautiful, I have my seafood guy down the block, he knows me on a first name basis by going to him, I talk to him, I spend a little time asking him questions. Now, shrimp when you buy them, first and foremost you should smell them, and they should smell like none. If they have a really fishy aroma, you should think twice. Also, they shouldn't be slimy, if they are slimy that's not good. You also should be able to take your finger and press it into the side of the shrimp, and if you can see the circle from your fingerprint, those are probably not good. There is also, you got to watch when you buy shrimp in the supermarket too, you might sometimes see like little dots, little black round circles on them, those are past their time, so watch watch for black circles on shrimp too, those are usually past their time, and they are still allowed to sell them because the won't hurt you, but they are not as fresh as they could be. So remember when you're going, smell it, look for the sliminess, they should be translucent in color, should have a nice rounded back, nice firm quality to the meat. Go buy some good shrimp.
