"Now we are going to demonstrate how to actually fillet a chicken breast. We have the chicken breast actually with the bone in and this is a the underside as you can see the rib bones and such and one of my nice piece of meat that we are always trying to look out for is the chicken tender which lays up against here and you can see it is sort of like a tear drop shape it tappers a little. So I got a small scimitar knife which is a similar to a fillet knife actually and all we are doing is just shaving along the bone to remove that and that is a chicken tender. The rest of the job is going to require use cutting the fillet from the bone so we just want to go nice and easy and I'm just really using the point of the knife. Be careful of your fingers and sometimes this is a little easier to do off of the whole chicken. And I will leave the attach so you can see and that is our boneless chicken breast there removed from that part of the carcase."
