"Ok, our burgers are about 85% of the way done at this point, so I’m going to go ahead and drag these guys off the lower grill and put them up on the top grill. If I finish the cooking process the whole way on the bottom grill with this really high heat, it tends to dry them out. Once I’ve got them to the point I want them, about 75 to 85% of the way done, I’m going to go ahead and drag these guys up there. For ground beef, you’re looking at about a 165 degree internal temperature as far as safety is concerned. Most people are going to eat there burgers medium well to well done anyhow. I’m going to leave those guys up there and we’ve got a butter mixture here that we’re going to brush on our hamburger buns. We’re going to toast our hamburger buns up on the top level here. I’m going to crank the fire down a little bit here as it’s rather intense. Before we throw another protein item on here though, the mistake that a lot of people make is they don’t scrub the grill before hand. Once they pull their burgers or whatever off, they just start throwing more meat on, which is a bad thing. What we want to do is scrape off all the fats and residue from the first protein off so we have a nice clean cooking surface for the next guy that’s going on. "
