"Hi! I'm Louis Ortiz on behalf of Expert Village and today we are going to show you how to roll out some fresh pasta that we made in the previous video. This particular pasta machine that I am using has numbers on its dial and what's going to happen is we've got our pasta dough here and we are going to start with the largest number which means that the rollers on the inside of the machine are at their widest adjustment. As we roll, all we are going to do is just go down the numbers in successive all the way down to number 1. It depends on what kind of pasta you are going to make as far as how far you want to crank down this style. But again just to start with, we are going to start at 7 and start to roll the pasta through the machine at a number 7 and we will come back here in a minute and show you how to do that technique. We wanted to show you just the adjustments that will be made onto the side there. With these smaller numbers, the closer the roller is on the inside of the machine."
