"Now, a double boiler is very simple to do. You have to do it because it would be risky to put this chocolate in the microwave to melt it, because when chocolate burns, it does so almost instantly, and this way, over a double boiler, pretty much guarantees that it won't. Now we want to--you can see that the water is boiling here, on stove-top--I'm going to place in a bowl on top, but not so that it's touching the water. I'm going to transfer my chocolate in here, because essentially, the only thing that's going to be melting it is the steam from the water that's boiling away. So bring it all in there. Might need to get something to hold the bowl--not yet. So you can see, already, because it's very finely chopped, it's already starting to melt. So really watch it, stir it constantly, until it's completely smooth, and then we'll be ready to dip the strawberries."
