"Now, when I was deciding what vegetable that I'd like to do for tonight, I wanted something that was very colorful because of course we eat with our eyes, right? And I thought, yams are not only really pretty but they're wonderful and sweet when they're roasted in the oven. So what I'm doing is I'm just peeling with my knife; they're kind of hard, they're more interesting option than just your traditional potato. You could do this with regular white potatoes, but your plate won't look hardly as appealing. And I just think sweet potatoes taste better, not to mention they're better for you. So I'm just going to finish taking that off. You could do this with a peeler as well, but I actually find it easier with a knife. Growing up when I'd see my mother do this, and I was still using a peeler, I'd say didn't you--aren't you afraid you're going to cut your fingers? So you'll find that using a thin knife is definitely going to help you out, because if it's too thick you're just going to be wrestling with these yam fries. So cut them in--they don't have to be super thin, just make sure they're generally the same width."
