"Hi, I'm Mark Alyn for Expert Village. We're going to make a rue. A rue is a French word for a thickening agent. What we're going to do is we're going to use a little bit of cornstarch. I'll put maybe a tablespoon or two of cornstarch in our cup and I have warm water and then you mix it up real good just like that. What this does it gives the sauce body and consistency. It's an old fashion way of thickening but I like it and it works. What happens now we drizzle this in. It has almost no flavor it just thickens the sauce. There it goes it's starting to get consistency and some thickness in there. Now to finish our dish, we take our game hens and we place it in the sauce upside down so that the sauce coats the chicken or game hens on both sides. There we go, there we have it game hen with blackberry sauce."
