"Hi! This is Matt on behalf of Expert Village and today we are going to make pepper steak and pork over a bed of rice. Before we start working on our peppers here, I just want to remind you that it is probably a good idea to have two separate cutting boards or three separate cutting boards because if you handle your meat on a cutting board, you don't want to use the same cutting board. So this is small relatively inexpensive so try to get yourself a couple of different cutting boards. If you only have one, make sure you wash thoroughly the cutting board that you cut meat on before you cut anything else on it. Anyway so, we are going to start cutting these peppers. An easy way to cut the pepper is to take your knife and cut around the stalk; pretty simple. In a circle and all you have to do is just pull the stalk out like this. Now we are going to gut the stuff in the inside, the seeds and all kinds of stuff like that. We will take our stalk and put in our waste bowl for stuff that you are not going to use. Always have a bowl for stuff that you are not going to use and a bowl that you are going to use. I am not going to dice these peppers. I want long pieces for this pepper steak. So we are just going to cut it down like this. You see all the waste material in here, we are going to rid of that. Just kind of cut it down like this. Then we are going to kind of pick off the kind of gristle, whatever you want to call that. You can break them with your hands and put them in there you see. This is the kind of pieces that you want for your pepper steak. We will break these off like this. Just break that in half and just kind of cut down the middle here, get your stalk out right there and drop it in the waste bowl and just slice down. Green pepper, do the same. Cut out that stalk, there you go. Slice down the middle and there you have the peppers that we are going to use in our dish. "
