Adding Cream & Cheese to Alfredo Sauce for Chicken & Shrimp Alfredo

"Hi this is Matt on behalf of Expert Village and today we are going to learn how to make my chicken shrimp penne pasta with homemade Alfredo sauce. We are going to add our heavy cream and our Parmesan, Romano cheese. Okay here is the trick; Do Not leave the pan, Do Not leave the stove. You have just keep stirring it cause you can not let it scorch. We need the cheese to totally melt so be prepare to stand here for a long time until the cheese totally melts. So just keep stirring it. We are going to have to sit here and keep stirring it and stirring until there is no more solids. See how if this solid is the cheese we want both types of cheese to melt in this cream. But the trick is the hard part is you do not want the cream to scorch. So that is why you can not leave not to go answer the phone, do not go to the bathroom, just stand here and keep stirring and keep stirring, keep stirring until there is no more solids. Just nice and thick and smooth. You still have some solids in here but it is getting a little bit better. So I'm just going to keep stirring, stirring until all the solids are gone. Okay I think we are about done so here we are our homemade Alfredo sauce. "
