"Hi, this is Matt Senatore on behalf of Expert Village, and today we're going to learn how to make my grandma Josephine's chicken parmesan. So now we're ready to cut our chicken breasts. Now remember before you prepare any type of chicken, chicken breast, chicken wings, chicken legs, make sure you wash it first. Get a bowl and just run the water through it, and just, you know, wash each piece of chicken. Some people use lemon juice, my mom uses lemon juice, so just make sure you wash the chicken. Okay, so now what we're going to do is we're going to take each breast, you see how thick they are, and we're going to cut down the middle, cut down the middle to make them thinner. So they cook easier in the pan. So I hold, here's how I do it, I hold the chicken like this, and I just cut right down the middle, right down the middle. And now we have a thinner piece. I just put this over here. And you get twice the amount, you get twice the amount of chicken too. So, I'm just going to cut it right down the middle. See, just like that.
