"Hi, this is Matt Senatore on behalf of Expert Village, and today we're going to learn how to make my grandma Josephine's chicken parmesan. So now we're ready to cut our chicken breasts. Now remember before you prepare any type of chicken, chicken breast, chicken wings, chicken legs, make sure you wash it first. Get a bowl and just run the water through it, and just, you know, wash each piece of chicken. Some people use lemon juice, my mom uses lemon juice, so just make sure you wash the chicken. Okay, so now what we're going to do is we're going to take each breast, you see how thick they are, and we're going to cut down the middle, cut down the middle to make them thinner. So they cook easier in the pan. So I hold, here's how I do it, I hold the chicken like this, and I just cut right down the middle, right down the middle. And now we have a thinner piece. I just put this over here. And you get twice the amount, you get twice the amount of chicken too. So, I'm just going to cut it right down the middle. See, just like that. Let's try this one more time, cut right down the middle, and we have thinner fillet breasts. Let's do this on this one, oops. And then if you wanted to even make more, have more breasts for your chicken parm, you can do this. Now you have even more. So let's just take this last piece here. Just remember pinch with your finger, take the knife, be careful of course, and just slice right down the middle. And there you have it. So that that we've got that done, let's bread our chicken breasts. "
