"SCHMUEL: When you're making great macaroni and cheese from scratch, you make a roux. And a roux is a thickener that's made by mixing butter and flour together and cooking it and then you add your liquid to that, the milk and dairy and stuff. So we need for this recipe, we need a half of cup of butter. It goes into our sauce pan. And for this one, you need a large sauce pan because in this pan, we're going to be combining all our boiled milk, our cheeses and our pasta. So make sure it's big enough. And to that, we will add a half a cup of flour to the melted butter. It's almost melted. We can just add that now like so, and you take your whisk and you just whisk this together. I'd say for about 5 minutes until it just starts to turn brown 'cause what happens is, you don't want it to get too brown, 'cause you know how like brown butter tastes like brown butter and that will be a little bit too strong of a flavor of a roux for this. You can use darker roux flavors for different recipes, but like I said for this one, that would be a little bit too strong. So here we go, this is great. This is coming along very nicely. I'll let you see how that looks, the roux. It's just a flour and butter paste. Absolutely lump free as it comes together. And we'll just keep mixing this together.
