Today were making southwestern chili now it's time to cut up the tomatoes these are vine ripen you can get these at the store or you can use romas any type of tomatoes that you like. They really do enhance the flavor of chili if you do them ripe like this you can use cans but there's nothing better than nice flavor tomato in your chili so go ahead and take off the stem and I like to use a nice serrated knife and you can cut them anyway you please. But as you see I like to go through this way and I just grab them on this side and this is a lot easier than slipping your knife over here. I like to have them meat side up like that so there's not risk of cutting yourself just turn them like that, I like a nice medium dice you can do them finely again just like the peppers, and I leave the seeds in no problem for me, but if you want to you can just go ahead and deseed them just by pushing the seeds out that's no problem at all, if that's what you prefer. They just come out just like that so it doesn't matter in chili everything is going to cook down it's going to have a great flavor so I just cut them across like that.
