"Hi this is Dave for Expert Village and today were making southwestern chili now we're going to be cutting our peppers for this fine chili so what your going to do is make sure you use a glove that will be very nice, because the oil will get into your hands if you rub your eyes at all your going to be crying all night. So just use this to grasp the chili your going to start out with chopping the jalepeno as I said it's going to make a nice flavor to it, so just take off the end. Here is where it's going to take a lot of the heat out because we have plenty of other things that's going to give it some nice heat. So what you want to do is take out the seeds and some of the ribs there because this is where it holds ton of heat so if you really like it spicy go ahead and leave those in that's fine. I like mine sort of in between not overall spicy but some so you can take that rib and seeds out, you see how easy that comes out. You can leave a few in but then but what you want to do is cut it this way now I like mine sort of a medium sort of diced instead of something really chunky or too small. Cause you actually want to feel the texture to as your eating the chili so just like that make a nice dice like that and then you can also do the other one, but here is a Serrano and you want to grab one of those and there smaller. They got a lot more spice to them so watch out what you do there but it leaves an extra flavor in there thats really great, you want to do the same thing as far as the seeds and the ribs. You want to take those out these are very very spicy, put those aside just like that, put those aside and do another dice and I said these are smaller but they pack a punch so but great flavor too, so go ahead and cut those just like that."
