As you can see in our pot we have our onion and garlic cooking, that is cooking in a combination of olive oil and butter. That is going to give us a nice delicious velvety flavor that has been cooking for about four or five minutes. The onions are starting to take on some color, next we are going to add our diced carrots for some sweetness. I love adding carrots to any kind of sauce, I put them in even Italian sauce, always add carrots. I always think that the mark of a sauce of a person who knows what they are doing with an Italian red sauce as if they have carrots in it. Our russet potato that we diced up in bigger chunks and stir that around and let that cook a little. Then that is the bases for the sauce for our chicken pot pie. In our next segment we are going to talk about a roux. We are going to develop a roux that is going to really make our sauce cling together, see you in the next clip.
