"On behalf of Expert Village I'm Laura Bandford and I'm going to teach you how to make a delicious chicken pot pie. Now I'm going to talk about puff pastry. Puff pastry is an important ingredient in any kind of pot pie because it is the flaky crust that goes on top. What is puff pastry? It is a pastry made with flour, salt, butter and water. If you are buying prepared puff pastry which I suggest you do because it is really time laboring tense to make it yourself. Look for puff pastry with ingredients that just include those four things not a lot of other stabilizers. What you do when you make puff pastry if you were making it yourself? Is you roll out a dough just a plain dough with flour and water and put butter in between and you fold it over and put more butter and fold it over and more butter until there is a layer after layer after layer of dough and butter. When that hits the heat in the oven it puffs right up and gets nice and flaky. Now puff pastry isn't the same as phyllo and that is the kind of a misconception phyllo is made with oil and that makes it really really crispy as oppose to flaky when it is heated. Puff pastry must be kept cold you thaw it a little bit if you buy the prepared puff pastry. Here are two sheets of puff pastry as they look when they come right out of the freezer. These have been thawing for about a half an hour, you want half an hour to forty minutes of thawing time before you start to roll it out. Some of the things you can make with puff pastry are pastry pinwheels, apple turnovers, or Beef Willington that is a really good standard of dish that you make with puff pastry. In the next clip I'm going to show you how to poach the chicken and we are really getting started now in making our chicken pot pie."
