"What to do? I'm Lawrence Holmes, and I'm here in from of my rib shack, Bib Papi's, in beautiful North Hollywood, California. On behalf of Expert Village, I'm going to teach you how to prepare, smoke, and barbecue you some sausages. Look what we have here. We have some perfect coals going on with this Mexican Mesquite wood that I like. Other than different charcoals, you want a total white with that charcoals that you use. But with this Mexican Mesquite, it's going to have white and black. You don't have to put too much lighter fluid into the mix to get it going. What we have going on here is, since it's wood--the origin of it is wood--you want it to start up like wood; you don't want too much lighter fluid on. You got enough heat just with half of it being white, so don't get confused because if it's all white it's O.K. with coals, but if it's half-white with the Mesquite; you're all good and you're still smokin'. So now that since we got the Mesquite wood going just about right and a little bit of kickback from the Oak wood; you know what I'm gonna do? I'm going to teach you how to do some side orders and prep some meat so you can throw it on this grill and get it going. Come on in, come on in!"
